For the international team of a performing arts consultancy · Pappilanmäki, Porvoo An immersive journey through six European terroir wines: Sancerre, Piedmont, Pfalz, Alsace, Rioja and a Finnish berry wine from Loviisa. Each wine was introduced through an audiovisual story about the land where it is made. The food arrived in a chest holding a collection of amuse-bouches to be eaten by hand, inspired by French technique with Latin American touches. The acidity of the mussels, the concentrated flavours of the slow-cooked meat, the elegance of the organic barley and the sweetness of local sour cherries with rosemary were each paired precisely with a wine.
